Multi-Michelin-Starred Chef Returns to Four Seasons Resort Palm Beach
Multi-Michelin-starred chef Mauro Colagreco returns to Florie’s, his only restaurant in the United States, located at the Five-Star, Five-Diamond Four Seasons Resort Palm Beach.
From April 24 to 26, 2025, guests will experience two exclusive dinners: a refined tasting menu inspired by the French Riviera, and a one-night-only seaside asado honouring Chef Colagreco’s Argentine roots. Each evening offers a distinct celebration of fire, flavor, and cultural connection.

Thursday and Friday, April 24–25, 2025: Ocean and Flower Dinner
Inspired by the flavours of the French Riviera and the award-winning cuisine of Mirazur, this four-course prix fixe menu celebrates spring through the lens of Chef Colagreco’s Mediterranean roots and global perspective. Guests will enjoy dishes highlighting the season’s floral and oceanic bounty, such as red snapper with white asparagus and jasmine butter, and violet ice cream with vanilla crémeux and meringue. Each plate is a delicate expression of nature’s rhythm, brought to life through the open fire and open kitchen of Florie’s. Priced at USD 195 per person, with an optional wine pairing available for an additional USD 90 per person.

Saturday, April 26, 2025: Seaside Asado with Chef Mauro
For one night only, Chef Colagreco will host a rare seaside asado – a traditional Argentine open-fire feast reimagined through his signature lens. The evening begins with a cocktail reception featuring small bites such as smoked butter onion tart and hand-folded empanadas. Guests will then enjoy a bountiful dinner served al fresco, with standout dishes such as lamb cooked on the cross and whole fish roasted over embers, paired with rustic accompaniments such as charred sweet potato and braised cabbage with Bagna Cauda. To conclude, dulce de leche flan and crêpes cooked a la chapa offer a sweet tribute to Argentine tradition. Priced at USD 165 per person, includes beverages.
