Bailey’s Irish Floats
Ingredients
6 scoops of vanilla ice cream
2 cups of Guinness beer
½ cup Bailey’s Irish Cream
¼ cup chocolate syrup
Scoop three scoops of ice cream each into two tall glasses. Pour 1 cup Guinness and ¼ cup Baileys over each serving. Drizzle with chocolate syrup and serve immediately.
Irish Whiskey Maid
Ingredients
2 oz Jameson Black Barrel Whiskey
1 oz fresh lime juice
.75 oz simple syrup
3 slices Japanese cucumber, muddled
2 fresh mint leaves and cucumber slice for garnish
In a shaker glass, combine whiskey, lime juice, simple syrup, and cucumbers and muddle together. Add ice and shake vigorously. Fine strain into a rocks glass over a large ice block. Garnish with fresh cucumber and mint sprig through the middle.

Ingredients
1.5 oz Casamigos Añejo
.5 oz Créme de Mure
.25 oz agave nectar
Top off with Guinness Beer
Combine all ingredients into a tin shaker except Guinness. Add ice. Shake vigorously for 8-10 seconds. Fine strain into a coupe glass. Top of with Guinness. Garnish with 2 fresh blackberries through skewer with edible green & gold glitter on top.
Irish Whiskey Mule
Ingredients
2 oz Irish whiskey
½ oz lime juice plus 1 lime wheel for serving
4 oz ginger beer
1 mint sprig for serving
Fill a copper mug or large rocks glass halfway with ice. Add the Irish whiskey and lime juice and stir to combine. Pour over the ginger beer, stir gently, and serve with a lime wheel and a sprig of mint.
Irish Negroni
Ingredients
1 part Red Bush Irish Whiskey
1 part herbal aperitif (such as Campari)
1 part sweet red vermouth
Orange peel
Combine ingredients in a rocks glass. Add ice and stir until combined.

.75 oz Grand Marnier
Splash of Fever-Tree Tonic Water

1.5 oz Midori Liqueur

Irish Old Fashioned
Ingredients
.25 oz honey syrup (2 parts honey, 1 part water)
2 dashes of Angostura bitters
2 oz Redbreast Irish Whiskey
Garnish with a swath of lemon
Combine all ingredients. Add ice and stir until the cocktail is chilled and properly diluted. Strain over ice into an old-fashioned glass. Garnish with a swath of lemon.
Irish Coffee
Ingredients
16 oz hot water
2 tsp light brown sugar
1 cup brewed coffee
2 oz Irish whiskey (such as Jameson)
½ cup heavy cream for topping
Chocolate shavings for garnish
Fill 2 mugs with hot water and let sit for two minutes. Pour out the water and add one teaspoon of light brown sugar to each mug. Pour over hot coffee and stir to dissolve sugar, then pour in whiskey.
In a separate bowl with an electric mixer or by hand, whisk the cream until soft peaks form. The cream should be thick but still pourable. Top coffee with cream by gently pouring over the back of a warm spoon to form a thick layer on top of the coffee. Garnish with chocolate shavings.

1 oz Green Chartreuse
1 oz Luxardo maraschino liqueur
1 oz lime
3-5 mint leaves
Add all ingredients to a shaker tin with ice. Shake and strain into an absinthe-rinsed coupe glass. Garnish with mint.
Gaelic Grasshopper
Ingredients
1.5 oz Kerrygold Irish Cream Liqueur
1 oz Teeling Irish Whiskey
.5 oz Creme de Cacao
.5 oz Brancamenta
Shake lightly and strain over crushed ice. Garnish with mint and shaved chocolate.
